A Filipino staple, the humble 'grilled eggplant', gets a White House treatment.

Another source of pride for Filipinos everywhere is American-Filipina Cris Comerford, the executive chef at the White House. When she got the job back in 2005, she made history on two counts, being the first female executive chef and the first to be from an ethnic minority background. 

As we say here in Oz, on ya' Cris! 

The gig? Cris looks after the meals of the First Family and manages the teams that handle State Dinners at the White House. Talk about pressure!


There are several videos featuring her and none other than Michelle Obama but The Australian Filipina picks this particular video because it shows her getting her hands dirty: peeling the skin off charred eggplant. Could it be that this particular meal is inspired by the Filipino's own recipe for ensaladang talong. I wonder what the First Family thinks of the side dish to this - the bagoong!
